CHOC PEPPERMINT BLISS BALLS
Makes approximately 12
MACROS PER BALL
1 cup dry roasted almonds
1 cup dry roasted cashews
15 pitted dates
3 tablespoons cacao/cocoa
1 teaspoon natural peppermint extract
Place almonds and cashews into a processor and blend until the mixture becomes a coarse flour.
Add dates and cacao/cocoa and blend until the mixture becomes a fine, sticky crumb.
Add peppermint extract and mix with a spoon to combine.
Using your hands, roll and press the mixture into balls.
in a sealed container, place the balls into the fridge to set.
Suggested Variation: Use desiccated coconut in the mixture and/or to coat the balls - You may need to use coconut oil to ensure the mixture doesn't become dry, only add small amounts at a time to avoid the balls becoming oily.
